The Southbend 1119598 Infrared Broiler LT Oil Raw Rack 13-3/8" X 24" works by placing food ingredients either above or below infrared heating units to ensure quick transfer of heat. This grid design enables the maximum amount of warmth to flow around the component, and the open-wire design enables the clearance of excess oils off the cooking surface. The rack is placed in the inside cavity of the broiler and slides along specific side rails so that the proteins are at a constant distance from the source of heat.
