The Montague MON1013-8 Thermocouple 30" is a temperature sensor at the tip and it generates a small electrical voltage which is proportional to the quantity of heat that it is sensing and is utilized by the control system to identify the presence of the flame or the temperature. They produce a voltage that changes depending on the variation in temperature at the sensing junction to be read as a signal. It is installed between the burner or pilot area and the control module of compatible commercial cooking equipment and coaxially installed to cover the lead.
