The Alto-Shaam 15892 Product/Food Probe Sub-Assembly is an temperature sensor that is installed in commercial ovens to check the temperature inside the food during cooking. It is directly linked to the control system of the oven which provides real-time feedback that allows to control the cooking cycles and provide the same results. The probe is usually placed in the oven cavity and it measures the heat at the product level and sends a signal to the electronics of the oven to adjust the temperature or time cooking accordingly.
