The Southbend SOUB940000201 Thermostat is a temperature control system installed in a gas cooking system to regulate the operation of the burners. It has a 3/16-inch by 12-inch sensing bulb, a 36" capillary and stem that measures temperature within the cooking space. The thermostat regulates the flow of gas in the control valve as the temperature varies to achieve the desired temperature. It is installed in the gas control system of the appliance and is fundamentally essential in controlling the heat output and assisting in the maintenance.
