The Star Mfg 2T-30402-07 Thermostat 48" CAP is used to regulate the internal temperature of the oven by detecting the amount of heat and adjusting the electrical circuit that is attached to the heating components. It works based on the change of temperature by expanding or contracting the capillary system, which provides a high level of control of the cooking Conditions. This thermostat is usually mounted in the control panel of the oven, and the 48-inch capillary tube is inserted into the heating cavity so that it can accurately sense and react to changes in temperature.
