The Henny Penny 14648 Fryer Thermostat Control Kit 500/561/OE-30X monitors the amount of heat in the fryer and varies the heating components accordingly when in use. It operates by a temperature sensor bulb and control system that detects a variation in the temperature of the oil and switches on the heating or cooling to keep the temperature at the required level. This kit is mounted in the control compartment of the fryer and the sensing bulb is mounted in the fry pot where it can directly measure the temperature variations.
