The Ultrafryer ULTR18182 High-Limit Thermostat 400°F 457mm uses a sealed 18" capillary sensing system featuring a temperature-responsive bulb that monitors fryer oil conditions and activates a mechanical cutoff when the preset limit is reached. As heat increases, the internal pressure within the capillary tube shifts, activating a safety switch that interrupts power to the heating circuit to stop further temperature rise.‍ It is installed inside fr‍yer units, typically positioned in the fry t‌ank or heating zone where di‌re‌ct oil temperature detecti‌o‌n is required for overheat protection.
