The Southbend 1055899 Thermostat 3/16" X 12" 36" 450F Cap KX is a temperature controller that is used to control the amount of heat in compatible commercial cooking parts. Its main purpose is to check and control the chosen operating temperatures to have a uniform heating operation. The thermostat operates by sensing a temperature change with a capillary assembly and bulb that senses the temperature change and sends a signal to the control mechanism to either increase or decrease the amount of heat produced.
