The Ultrafryer 12C356-C Temperature Probe W/2-Pin Connector RTD is a resistance temperature detector sensor that is fitted to be used in the compatible commercial control systems. It is used close to the cooking vat and measures the temperature of the oil, and provides specific feedback through it to the fryer control board using resistance as the feedback. It is then used by the control system to control heating elements or gas valves to maintain the correct temperature during the cooking cycles.
