The Garland 222106-2 Infrared Burner W/NAT Orifice #40 uses natural gas to produce the high intensity of radiant heat using a special tile surface. This burning process produces electromagnetic waves, which directly heat cooking surfaces as opposed to only heating the air around them. It is used in a heating chamber of the compatible heavy-duty commercial broilers so that there is better thermal circulation throughout the cooking area. The assembly facilitates a constant flow of fuel required in large-volume kitchen setups by using a specified size that requires quick recovery of heat.
