The Imperial 37378-208 Griddle Element 208V works by transforming the incoming electric power into heat by using an internal resistance coil that warms the metal sheath when the current is flowing continuously through the element in use in a professional kitchen. That heat is conducted upwards by conduction to the griddle plate, and keeps cooking temperatures constant as thermostatic controls switch power on and off to control output during constant commercial food preparation on cooking lines. The element is mounted below the griddle surface in compatible flat-top cooking equipment.
