Berkel 403675-00075 Truing Stone is used to sharpen and keep the edge of blades straight by removing small portions of metal to create a straight cutting edge. It works by rubbing the stone on the blade at a controlled angle and, in effect, takes out the imperfections and nicks. This is designed to be readily accessible and is positioned close to the cutter such that it can be adjusted without taking apart the equipment to ensure the blade is in a straight spot and can be used consistently in food preparation settings.
