The Hobart 854646-00001 Braising Pan Thermocouple works by transforming the energy of the heating element to a low-voltage electrical signal via the junction of two dissimilar metals. This voltage enables the internal control board to measure continuous temperature changes, and regulate the flow of power or gas in order to achieve a consistent set point. The component is normally fitted in the warming unit or simply threaded directly into the bottom to make sure that there is direct contact with the heat source.
