The Hobart 854646-1 Braising Pan Thermocouple works by sensing a thermal gradient using the junction of two dissimilar metals and this produces a small millivolt signal proportional to the heat levels. This voltage is passed to the control board to regulate the amount of gas flowing or the heating elements to ensure the inside condition is the same as the desired temperature setting. The component is placed directly into the burner assembly or the area of the heating source where it is in close contact with the pilot flame or heating source.
