The Frymaster FM8100687 Infrared Burner Steel is a heating element that is used in commercial appliances. It has a size of 15-1/4" by 8-1/2" and produces infrared heat to efficiently transfer energy, to the heat exchanger of the fryer. Placed inside the burner assembly. In the actual foodservice setting this burner is used to facilitate quick heat recovery during high-volume foodservice and to aid in maintaining consistent efficiency during service periods. It is the fryer system that enables it to operate in coordination with gas valves and controls to provide ignition, controlled heat production and proper performance of the appliance.
