The Henny Penny HEN16219 Thermocouple operates by detecting the temperature at the tip and producing a small electrical signal that is proportional to the amount of heat in the combustion chamber of the appliance. The control system uses this signal to regulate and control the operation of the burner. The thermocouple will be installed in the heat chamber equipment and the 18" length will be installed to get to the proper sensing point. It is a temperature-sensing part of a commercial cooking system.
