The Henny Penny 96887 Fryer Hi-Limit Thermocouple Service- Pack LVE20X measures the temperature of oil and sends a signal to the control system of the appliance to turn off the power in case the temperature is too high or too low. It transforms the heat produced in the fryer into a small electrical current, which activates the high-limit safety mechanism. The service pack is fitted to the thermocouple, being placed close to the oil reservoir or heating element to sense properly. It is designed to be used with commercial fryers and is connected to the electrical and safety systems.
