The Keating 004341 Fryer High-Limit Thermostat Manual Reset measures the temperature of the oil and switches off the heating element when it goes beyond the safe operating temperature. The sensor has a 1/4" X 4" bulb that detects temperature, and the 30" insulated capillary and insulation sleeving shield the sensor during use. The thermostat is mounted in compatible commercial fryers, and it is connected to the heating circuit, and it is placed close to the oil reservoir. It is intended to be used in a high-temperature cooking area and is compatible with the electrical system.
