The Star Mfg WS-63927 Thermocouple Probe is an alternative temperature-sensing part to measure and communicate temperature conditions inside compatible commercial cooking equipment. It is used mainly to give an indication of the temperature to the control system which can then regulate the heat output. The probe is based on the theory of sensing temperature changes and sending electrical signals to be analyzed and adjusted. It mounts in the designated probe mounting place in the equipment and is directly connected to the control circuitry.
