The Ultrafryer 12C355 Temperature Probe Pre-2006 Only monitors the oil temperature in the appliance. It works on the concept of detecting changes in resistance in an RTD sensor with a change in temperature and transmitting signals to the control system. The probe is fitted in the tank which is connected to the control board through the 187 connectors. It is a component of the temperature-sensing system in the appliance which makes it work with heating elements and controllers to keep the oil temperature at the right level.
