The Alto-Shaam SN-38110 Sensor Wire W/ Connection 100 OHM 110" works by passing resistance-based temperature signals through the sensing point to the control system of the unit, which can be interpreted to read the level of heat during operation. It has a resistance value of 100 ohms that varies electrical readings depending on the change in temperature along the length of the wire. This is installed in the internal temperature sensor system of the appliance and is connected between the sensor point and the control interface where the sensor reading is processed.
