The Southbend SOU1183676 Charbroiler Radiant Assembly works by absorbing the heat of the burner flames and spreading it evenly over the cooking surface. This element absorbs heat to produce infrared heat that properly burns proteins and also shields the burners against grease and debris that may fall. This 19" x 10.5" unit is placed directly over the gas burner tubes and under the cooking grates and is the thermal bridge in the interior housing of the appliance. The construction is sufficient to provide thermal mass to ensure uniform temperatures when running a high-volume commercial kitchen.
