The Ultrafryer ULTR19B781 Fryer High-Limit Thermostat monitors elevated temperature through a remote sensing tube connected to the switching frame. When the sensed condition reaches 450°F, the internal contacts change position and interrupt the heating circuit. Extending 36", the capillary allows the sensing end to reach the designated thermal area while the electrical housing remains at its mounting location. Terminal points connect the assembly to the surrounding conductors, transferring the contact change into the circuit and stopping further heating until the sensing condition falls toward its reset range.
