The Frymaster 8073559 Hi-Limit Thermostat with Manual Reset 435°F works by checking the temperature of the oil in the fryer and disabling power when it reaches the safe operating temperature of 435°F. When the temperature drops to a safe level the manual reset system enables the thermostat to be started again and operated further. This element is placed inside the control assembly of the fryer, which is linked to the heating circuit to maintain tight control over the temperature, as well as prevent overheating during cooking cycles.
