The Dean 106-2695SP Fryer Computer Assembly works by sensing the internal oil temperatures with a probe that is attached to it and modulating the heating components to keep the thermal equilibrium at a predetermined point. This electronic part takes regular information to use pre-programmed cooking cycles and timing cycles to maintain the same output of the kitchen. This is connected to the main wiring harness and power supply by plugging directly into the front control panel of the unit. This main controller controls the ignition modules and gas valves, which are the main logic gates to the warming operations of the appliance.
