The Hobart 344635-6 SP Thermostat is a mechanical temperature-regulating part designed for use on commercial cooking equipment. It has an adjustable temperature range of 200F to 450F and includes a 3/16" x 10" sensing bulb with a 36" capillary. It is placed at the sensing site and senses the operating temperature of the equipment and reacts to the changes in temperature. This response is transferred to the thermostat mechanism through the capillary, which regulates the electrical contacts of the heating circuit. It is used to control heat cycling and to keep the appliance at the desired operating temperature.
