The Ultrafryer 21A290 Rethermalizer Controller is used to regulate internal heating elements based on temperature of the liquids and to turn the power on and off to maintain the thermal levels at a constant. This electronic operating system takes input signals from humidity sensors to initiate certain heating programmes for frozen or chilled foodstuffs. The unit is attached to front control panel of rethermalizer to be accessed and seen during kitchen operations. It is the operational centre, which coordinates complex electrical signals into execution in commercial food preparation settings.
