The Henny Penny 81786 Fryer Flame Sensor Probe 1-3/8" monitors the safe running of the fryer burners by detecting a flame. It works by relaying the signal to the gas valve whether the flame is on. The probe will be mounted next to the flame in the fryer assembly so that it follows the flame path.
