The Frymaster FM8073680 High-Limit Thermostat W/Manual Reset is used to check the temperature of oil or chamber and to disconnect power when the preset limit is surpassed. The manual reset must be operated before being brought back to operation following an over-temperature condition. This thermostat is close to the heating component or the oil reservoir of compatible commercial fryers. It should be used as a replacement in case the high-limit is not working properly to ensure safe operation during cooking periods.
