The Rational 44.00.279 Heating Element Gasket works by closing the space between the element and the appliance cavity to help prevent the loss of heat and air out of the cooking cavity. It operates by squeezing a little when it is placed around the perimeter of the element creating a barrier that prevents unwanted flow through the opening. This gasket is fitted at the interface where the heating element passes through the wall of the oven. The heating element gasket is usually applied in commercial cooking equipment where it is necessary to have secure seals around heated elements.
