The Pitco B2400304-C Drain Board Assembly Stainless Steel 24/24R is made to control overflowing oil, by draining the appliance baskets once they have been cooked. The oil spills on the stainless steel surface and recedes to the fryer system through special channels. The assembly is attached to the side of the fryer vat opening, and it lines up with the basket hang points. Its design enables the fried products to rest over the fryer with the surplus oil returning to the unit to ensure that the oil is handled in an orderly manner.
