The Lang 2E41100-08 Sensor Probe W/39" Wire & Plug 1/8" X 18" is a sensor used to monitor internal cavities in an oven. By converting thermal energy into an electrical signal, which is interpreted by the appliance control board. This piece is connected to the integrated 39" wire and plug assembly relay to make the heating elements turn on and off depending on the settings. The stainless steel probe is fitted directly into the oven chamber where it is not covered by any air. This layout can allow direct contact between the cooking space.
