The Jade Range 4611300100 Thermocouple Screw 24" works by sensing the temperature inside the equipment that uses gas and producing a small electrical current that assists in regulating the amount of gas flowing to the burner. It operates as a safety element by automatically cutting off the supply of gas in case the pilot flame is extinguished and the gas that had not been lit does not build up. This thermocouple is mounted in the area of the pilot light assembly of any commercial kitchen appliance, like a range, oven, or fryer, and it detects the presence of flames, and ensures that the heating is functioning properly.
