The Montague B25 Burner Air Shutter 2-3/4" OD Double Plate Cast Iron controls the quantity of air to be mixed with the gas at the burner to assist in the proper combustion. It works by changing the air intake opening to enable the gas to air ratio to be regulated to maintain a stable flame. It operates in synchronization with the gas supply and burner parts, which helps to maintain the same amount of heat output and proper functioning of the burner in the cooking process.
