The Pitco B6756601-C High Limit Thermostat Service Kit works by controlling the temperature of oil in the fryer and automatically switching off power to the heating element when it reaches a preset limit. It is used together with the current controls of the fryer to ensure that the unit does not go to dangerous temperature levels. This service kit is designed to fit directly on the fryer and replace the original high limit thermostat and is compatible with the existing control system and does not require any further adjustments to ensure the temperature cutoff mechanism operates properly.

Installation Steps

Step1: Turn off fryer, disconnect gas/electric supply, and allow unit to cool completely.

Step2: Remove access panels to reach the existing high limit thermostat.

Step3: Disconnect wiring and carefully detach the old thermostat from mounting points.
