The Pitco PP10271 Pasta Cooker Hi-Limit Thermostat works by sensing the internal water or oil temperature with a 1/4-inch bulb probe and opening an internal switch mechanically when the temperature reaches a certain high limit thereby breaking the electrical power to the heating system. It works on the concept of thermal expansion inside the sensing bulb that activates a safety cutoff to stop heat input it has a manual reset type requiring the actual restoration after a trip condition. It is to be placed on the heating circuit of suitable pasta cookers with the bulb in the tank and the body mounted on the control housing assembly.
