The Lincoln 369006 Oven Thermostat 300°F - 650°F FDTH-1 is an induction heating element that operates on a capillary tube and bulb assembly to measure internal temperatures in a commercial kitchen setting. When the heat rises or falls, the internal fluid expands or contracts to open or close electrical links in a mechanical way to keep the thermal setpoint of choice. This part is attached to the back of the operator panel, and the dial interface is directly attached to the heating shaft to be manually adjusted. It is the point of the regulator over the heat that remains constant throughout the continuous kitchen cycles.
