The Hobart 18161 Thermostat senses temperature changes and adjusts the heating circuit according to the operating range. Its 3/16" X 12-1/4" bulb responds to surrounding heat, while the 36" capillary transfers the sensed condition toward the control mechanism across a 175-500°F range. This assembly is positioned in the designated sensing area of compatible commercial cooking equipment, with the bulb extending into the monitored space. As temperature changes, the internal mechanism responds by opening or closing the electrical circuit. The part is used in foodservice appliances where adjustable heat control is required during cooking and warming operations.
