The Hobart 718161 Thermostat monitors heat changes and controls electrical flow according to the temperature configuration. As surrounding heat reaches the sensing element, internal contacts respond by opening or closing the circuit. This assembly is installed within the control area of compatible commercial cooking equipment, with its bulb extending into the heated chamber. The sensing section uses a 3/16" X 12-1/4" bulb connected through a 36" capillary. Its adjustable 175-500°F range allows various operating points to be preferred. The unit controls heating activity during cooking, warming, and other temperature-controlled processes in foodservice equipment.
