The Hobart 719202 Thermostat detects changes in heat and responds by changing the electrical connection to the heating system. When the sensed temperature reaches the point, its internal contacts shift to regulate power through the circuit. This assembly is fitted within the equipment control area, with the sensing bulb extending into the heated compartment. Its 3/16" X 12-1/4" bulb connects to a 36" capillary, transferring the temperature response toward the control frame. The adjustable 175-500°F range accommodates different cooking conditions. It is used in commercial kitchen equipment for managing heat during cooking and warming cycles.
