The Star Mfg 2T-38656 Safety Thermostat watches the operating heat and terminates the electrical line when the set limit is reached. This prevents the warmth until the unit is restarted by manual operation. It's made as a Type LCHJ with a fixed temperature setting at 440F, so it operates as a high-limit safety switch in commercial cooking stuff that fits. This part goes close to the heating area. From here, it keeps watching the temperature and provides cover from too much heat. It gets fixed most times as the gear is put together when there is a service performed or as parts get changed to make sure the primary set temperature control system works.
