The Dean 807-3515 Thermostat TC125 200-400F 36" Capillary senses temperature with the help of a capillary bulb which detects the presence of heat and produces a control signal when the conditions change. As soon as the measured temperature falls within the set range, the thermostat closes or opens internal contacts to control heating elements as designed. It is inserted into the heating chamber or close to the heat source of other compatible cooking or holding equipment. The capillary is inserted to sense accurately and is designed so that it does not react properly to the change in temperature under normal operation.
