The Hobart 24146-1 SJ Thermostat is a mechanical temperature control part for commercial cooking equipment. It has an adjustment range of 175F to 550F, a 3/16" x 11-5/8" sensing bulb and a 42" capillary. It is placed at the correct temperature sensing point of the appliance and senses the change of operating heat. The thermostat is connected to those changes via the capillary and controls the related heating circuit. It is used in the appliance to control the heating cycle as set by the temperature setting in the cooking and warming cycles.
