The Hobart 411506-00002 SJ Thermostat is a mechanical thermostat designed to control the temperature of commercial cooking equipment. It has an operating range of 175F to 550F, a 3/16" x 11-5/8" sensing bulb, and a 42" capillary. It is placed at the designated sensing location within the appliance to sense the changes of operating heat. The thermal response is transferred to the thermostat mechanism by the capillary, which alters the electrical contacts that regulate the heating circuit, and it is used to control the heat cycling and to keep the desired temperature.
