The Montague MON1061-8 Thermostat responds to temperature changes through a 3/16-inch by 15-3/16-inch sensing bulb connected to a 54-inch capillary, adjusting the gas flow to maintain the selected heat setting between 150°F and 550°F. Its mechanical control continuously reacts to conditions inside the system, using a 3/8-inch FPT connection to integrate with the gas regulation system during operation. Installed in compatible commercial gas appliances, the unit operates as part of the temperature control assembly that manages heat levels throughout cooking cycles.
