The Hobart 110840-2 Fryer Hi-Limit Thermostat Bulb is a temperature sensor that acts as a security element for use in commercial systems. It has a 1/4" by 4-1/2" sensing bulb, a 30" capillary tube, and a 450°F temperature rating. This component measures oil temperature which in turn causes the heating to shut off at the preset point. It is put in the frypot with the capillary attached to the thermostat unit. What it does is it provides high-limit temperature protection which in turn supports efficient operation and also assists in providing controlled heat during commercial cooking.
