The Hobart 410840-2 Fryer Hi-Limit Thermostat Bulb monitors cooking oil temperature and activates the safety circuit if the preset limit is exceeded, supporting interrupting the heating cycle during overheating conditions. Featuring a 1/4-inch × 4-1/2-inch sensing bulb, 30-inch capillary, and 450°F temperature rating, it detects heat changes and transmits the temperature response to the thermostat assembly. This part is installed inside the fry pot of compatible commercial fryers, where it connects to the hi-limit control as part of the temperature safety system. It is commonly used in commercial foodservice frying equipment.
