The Hobart 410840-00002 Fryer Hi-Limit Thermostat is a temperature monitor that detects the amount of heat by the use of its capillary tube and probe assembly. It cuts power when the temperatures rise above the set limit of 450 F to prevent heating. This thermostat is fitted into compatible fryers, which are usually mounted in the area of the fry pot, with the capillary being in the oil area. It is connected to the control circuit to provide over-temperature control. The unit has a 30" capillary length to place it properly.
