The Hobart 119670-2 Fryer Hi-Limit Thermostat Bulb 1/4" X 4-1/2" monitors temperature by activating or deactivating the heating element when the set threshold is reached, preventing the appliance from exceeding 450°F. Its sensing capillary detects changes in heat and signals the switch to open or close, controlling the flow of electricity to the heating system. This thermostat is designed to be mounted inside the fryer cavity typically near the top or side where it can accurately sense temperatures, and maintain the intended thermal limit. The 30-inch capillary allows flexible placement while connecting the sensing bulb to the main control switch.
