The Vulcan Hart 00-723257 high quality thermostat with a dial control and a capillary tube of 3/16” x 8”, with a temperature range of 150°F to 400°F. This works on the principle of a capillary tube passing through the oven to measure the temperature and to expand or contract the gas to maintain a temperature for cooking.
